"American executive chef Geoffrey Murray has created a season-specific, often organic menu which mentions the farm or region of origin for key ingredients. Gloriously adventurous fare such as perlemoen with barley and pickled fennel competes for attention with sweetbread and chevin mélanges and unforgettably-fabulous duck confit. The dessert menu is disappointingly unbalanced (almost entirely dairy focused) and less impressive than the starters and mains. Petit four are too large and indelicate to be classified as petit. Service is probably the best in South Africa, with local youths having been trained so well that their knowledge and grace would stand up in the finest of Parisian fine dining."

On the castle’s wide veranda, shaded from the sun and cooled by sea breezes, Pezula’s chef Geoffrey Murray (formerly of North Island in the Seychelles) served the sort of lunch one dreams of in high summer: organic herb salad with figs and marula nuts to start; a main course of seared scallops on risotto coloured with sweet pieces of corn and baby peas; and a trio of coconut, mango and seasonal berries, with a buttery Morgenhof Chenin Blanc, as a triumphant finale.
